Iberico Rack

Iberian pigs are found only in the Iberian Peninsula in both Spain and Portugal. They are very old pigs, tracing back to over 12,000 years ago. The pigs roam free in the natural forests of the region and forage acorns, nuts, mushrooms, insects and grass adding to the distinctive flavour of the meat.

Their meat is a deep red colour and has beautiful fat marbelling which gives a deep, rich flavour and tenderness.
