Pork loin ('carré de porc' ou 'longe de porc') is the loin on the bone. The bones distute heat and add extra flavour. Ideal for any sort of roasting dish. Ours is perfectly trimmed, with a generous lay of fat and skin-on, to ensure some delicious crackling.
