Pork loin ('carré de porc' ou 'longe de porc') is a boneless pork joint, ideal for any sort of roasting dish. Ours is perfectly trimmed, with a generous lay of fat and skin-on, to ensure some delicious crackling.
At Christmas all the pork roasts will be scored with parallel lines not criss-cross.
